First SPU Kitchen is a Success!

The first Community Kitchen at Seattle Pacific University debuted on Wednesday! Six students cooked alongside eight neighbors. We made mango, black bean and quinoa salad with lime cilantro dressing, an African peanut soup, hearty zucchini casserole with wild rice pilaf, turkey, and other veggies as well as granola with almonds, pumpkins and sunflower seeds. After sharing soup and bread, participants took home 15 servings of food each! We all enjoyed each others’ company and everyone is looking forward to the next Community Kitchen on May 11th.

An Asian inspired feast!

We had another great kitchen with our families, inspired by Asian traditions.  We made Shio Yaki Saba, broiled salted Mackerel, Soba Noodles with Peanut Miso Sauce, bok choy salad, sushi rolling, and we also fit in making a batch of kimchi and kombucha!  The theme was based on two requests to cover Japanese food and digestive health in our menu. This worked out pretty easily since there are so many fermented foods in Asian cuisine.  You’ll find the recipe for the delicious Peanut Miso Sauce in our recipe database!

Dance. Cook. Eat. Smile!

This is essentially what happened at our family community kitchen this past Friday.  We tried out a couple new things, with great success.  First, we moved our kitchen to the Union Cultural Center where we had the freedom to cook as late as we pleased, and had the comfort of knowing that our kids were safe and had plenty of space to run wild!  And, with the great energy of our lovely Syreeta, we had a dance class that kicked off the evening so that once people got to the kitchen, they were sweaty, hearts pumping, and ready to cook up some food.  Our guest chef for the evevning was Lois from Oaxaca, Mexico.  He brought in the flare of authentic Mexican cuisine, full force with a cactus salad, traditional rice and beans, and several types of salsas.  We are all looking forward to the next one which will be April 8, the second Friday of the month!

Making Soup at the Miller CK

Today was the third session of a new ck held every Friday at the Miller Community Center.  This ck is a partnership between ReWa, the Secondary Bilingual Orientation Program, Miller Community Center, SNAC and Community Kitchens Northwest. 

Lots of vegetarian beans

Plus fresh veggies

Makes delicious soup

Granola bars with lots of oats were also made.

Chopped nuts help the granola bars taste great.

Inspiring Food Movie – “Queen of the Sun” – A Must See!

Among the many food documentaries that are coming out these days, few seem to offer a new perspective on food that hasn’t already been said, until Queen of the Sun!  This is an outstanding and beautifully shot movie looking at the current state of bees and tracks the wisdom of several biodynamic beekeepers around the world.  Moved by the prediction made by Rudolph Steiner in the early 1920’s, this documentary opens the dialogue about Colony Collapse disorder threatening the bee populations around the world and offers an inspiring message around what is being done as well as what each of us can do as individuals, starting with growing flowers in your yard or on your porch!  It’s playing till Thursday, March 10 in Seattle at the Northwest Film Forum in Capitol Hill.  What was my take away – well, first that bees are absolutely incredible in how they function, communicate, and produce the golden honey we often take for granted, and it’s just WRONG to feed them high fructose corn syrup, artificially inseminate them, and otherwise raise them the same as factory farmed cows!  See the film and get inspired!!

Food Safety Made Easy! New Online Renewals

King County puts Public Health permit renewals for restaurants and other regulated facilities online

Temporary food service and farmers market permits, and plumbing and gas piping permits also now available over the Internet

 

KING COUNTY, WA – Nearly 11,000 restaurant operators in King County will now be able to pay for, print and post their public health permits right away, without having to apply in person or wait for the mail, under a new King County online permit service unveiled by Public Health – Seattle & King County.
